How It Works
Winter savory, a member of the mint family, is a perennial plant that thrives in poorer soil with less water than is required to grow summer savory. It grows 6-12 inches high and is a sturdy shrub with white to lilac flowers, and glossy, dark green leaves, approximately 1" in length. Winter savory grows wild throughout Southern Europe, and Northern Africa, and is sometimes referred to as "mountain savory." Winter savory is used to flavor sausage, salami, and other meats, particularly game, and herbs de province blends. Although they are of different botanical species, winter and summer savory have many of the same properties, and characteristics, including the same main essential oil constituents, carvacrol and cymene.
